Brookies – Fudgy Brownie Cookie Bars

Thick and fudgy brookies made with a rich brownie base and a soft, chewy chocolate chip cookie layer on top. The perfect combination of two classic desserts in one bite.

Ingredients
  

Brownie Layer:
  • - 113 g 1 stick butter, melted
  • - 100 g 1/2 cup granulated sugar
  • - 50 g 1/4 cup brown sugar
  • - 30 g 1/4 cup cocoa powder (unsweetened)
  • - 2 eggs room temperature
  • - 1 tsp vanilla extract
  • - 70 g 1/2 cup all-purpose flour
  • - 1/2 tsp salt
  • - 100 g 1/2 cup chocolate chips
Cookie Layer:
  • - 113 g 1 stick butter, melted
  • - 100 g 1/2 cup granulated sugar
  • - 50 g 1/4 cup brown sugar
  • - 1 egg room temperature
  • - 1 tsp vanilla extract
  • - 190 g 1 1/2 cups all-purpose flour
  • - 1/2 tsp baking powder
  • - 1/2 tsp baking soda
  • - 1/2 tsp salt
  • - 100 g 1/2 cup chocolate chips
  • - flaky sea salt optional

Method
 

Brownie Layer:
  1. Whisk together melted butter, granulated sugar, brown sugar, and cocoa powder until smooth.
  2. Add eggs and vanilla extract and mix until fully combined.
  3. Stir in flour, salt, and chocolate chips until incorporated.
  4. Pour the batter into a parchment-lined square pan and smooth the top.
Cookie Layer:
  1. Mix melted butter with granulated sugar and brown sugar until well combined.
  2. Add egg and vanilla extract and mix until smooth.
  3. Add flour, baking powder, baking soda, salt, and chocolate chips.
  4. Mix until a soft cookie dough forms.
Assembly & Baking:
  1. Spread the cookie dough evenly over the brownie layer.
  2. Bake at 350°F (180°C) for 30–35 minutes, or until the top is golden.
  3. Check doneness with a toothpick — it should come out with a few moist crumbs.
  4. Let cool completely in the pan before slicing into squares.

Notes

- Do not overbake to keep the center fudgy.
- Let the brookies cool fully before slicing for clean cuts.
- Use high-quality chocolate for deeper flavor.
- Sprinkle flaky sea salt on top for a bakery-style finish.
